Secret Revealed: Gigi Hadid's Kitchen Has Shan Masala

While surfing the Internet, I came across this picture of Shan Masala collection, all beautifully lined up in containers. Do you know who is using the Shan Masala?

Yeah, it is none other than the international celebrity Gigi Hadid who is using Shan Foods Masala in her recipes. It looks Hadid has become a huge fan of desi spices. Recently she shared a click on her Instagram and people immediately noticed the Pakistani brand Shan Masala. There is tikka, tandoori, seekh kabab and garam masala in the collection. Even the turmeric container is labeled as Haldi.  It is a proud moment for all of us that Pakistani brand is making a further big hit as top-notch celebrities are now selecting Shan Masala for its high quality.

Karachi Eat Is Back With A Bang!

The seventh edition of the biggest eat festival – Karachi Eat 2020 is back with a bang. This year, there are more than 100 eateries to tempt foodies. The three-day festival will give a chance to food lovers to taste sweet, savory and delicious food till 12th January at the Beach View Park.

The 100 plus food stalls are set up by big multinationals to startups or home-based businesses. Keeping in mind the haphazard of previous experiences, the organizers are more precautious and have made some changes to accommodate the crowd. There are clear signs for directions, entry, and exit to avoid the rush.

The eateries will include Chipseez, (introducing their signature Beetroot, Sweet Potato, Potato Chips), Zoya’s Kitchen giving Cannoli (Italian pastries) and Lemon Grass, introducing Crying Tiger, Rigos ice cream, Churrosity will have Churro Hot Dog, Cloud Naan will have Chicken Naan, Spicogetti will introduce their new starter Chic ‘N’ Cheese Spaghetti along with signature Khausa, Singaporean Rice and Wrappeite will give you Bread Bowl Lasagna.

Some very distinctive titles will also be at Karachi eat 2020. These will include Drty Dogs, Khichdi Express, Brew Factory, Abid Chatkhara, Punjabi Dhaba, Arabi’s, Clucky’s, Lemon Grass, Leena’s Cevapi, Burger Boss, and D’oh.

For a yummy sweet dessert, visit Made Easy stall by National Food Ltd. Here you will find the tasty Royal Falooda. Review - For The Love Of Sea-Food At Asia Live, Avari Towers!

Last time I went there to try their yummy Arabic Food. The experience at Avari Towers’ restaurant Asia Live was so excellent that I decided to go there once again. However, this time, it was not a food festival but a regular themed night dinner. Yes, Asia Live offers distinctive theme buffet nights with a vast variety of delectable cuisines.

In my previous blog, I have already written about the cozy ambience of Asia Live. The restaurant's staff will welcome you with a friendly gesture. They will escort you to your desired table. The thoroughly professional team is very cooperative and helpful. The impeccable ambience is perfect place for a delightful evening as it provides an absolute leisure atmosphere so that you can fully relish your meal.




Coming back to their creative themed dinners, the seafood nights happen every Friday at Asia Live Restaurant. I must say that through its themed dinner nights, restaurant is not only offering masterfully prepared scrumptious food but also raising the bar for fine dining. The idea to add a theme to dinner is to make it more enjoyable. 

So, the last Friday, I went there to experience another wonderful dinner comprised of seafood. I was expecting some unusual dishes as part of seafood. But to my surprise the buffet menu was well-chosen while keeping in mind the food-lovers’ typical choice and tastes.



The menu was an amalgamation of culinary flare, unique flavor and diversity of seafood. It included fish and crab based dishes along with pasta, vegetable, Japanese savors, fried, tikka and the yummy fish pilaf. The huge range of appetizing salads, pickles, and desserts was another feature of the buffet dinner.


One of the most attractive feature of the seafood theme night was Live Fish Cooking. There was a variety of raw fishes available that one can select and order to be cooked as per taste. The chefs would prepare your desired fish dish and serves you right from the stove. This is an amazing side of Asia Live restaurant that keeps it on top of other eatery places. 

I started my dinner with a crab soup. It was prepared as restaurant’s own specialty. The taste was fine and well balanced. After this, I tried Tilapia fish with Thermidor sauce, Crab in bonne femme sauce, Red Snapper teppenyaki, Tuna fish pulao, Bekti tikka, and Pasta Marinara.



I loved the crunchy taste of Bekti tikka and spicy flavors of Tuna fish pilaf. Both dishes were cooked in a pure eastern way and gives a BBQ and biryani style aromatic flavors. The Crab in Bonne Femme sauce was prepared in a white creamy textured sauce and tastes very good. The meat was well cooked. The Pasta Marinara was another great dish with slight red colour and peppery taste.

I finished my dinner by tasting the sweet treats including jelly with pine-apple, fruity trifle, brownies, soft custard, and the famous king of sweet dishes the Gulab Jaman dipped in sugary sauce.



Verdict

If you are a true sea-food lover and want to enjoy some aromatic dishes, some creamy flavors and diverse desserts, then I would highly recommend that you should try the menu of Asia Live’s themed nights with your family, friends, and colleagues. It will cost you Pakistan Rupees 2300+tax per head.

Recipe - Hot And Spicy Red Kidney Beans Curry (Rajma Masala)

Every recipe of beans is different depending on the taste and likeness of the people. In our family red kidney beans curry is one of the favorite dishes. We call it Rajma Masala. Rajma is the word for beans while Masala means mixture of spices. So, Rajma Masala is actually “Spicy Beans”.

This curry is usually has some saucy consistency but in our home we like to have it almost in a thick paste style, means no watery effect. This recipe is very spicy but if you want a mild version of it, just cut down the quantity of red and green chillies.


Let’s start our recipe of hot and spicy red kidney beans curry.

Ingredients:

Onion 1
Tomato 2
Ginger 1 tsp
Garlic 1 tsp
Cumin ½ tsp
Black pepper 6
Red Chilli powder 2 tsp
Turmeric powder ½ tsp
Coriander powder 1tbsp
Salt to taste
Oil 6 tbsp
Red Kidney beans 1 cup
Green Chillies 4

Method:

Soak kidney beans for 6 hours.

Fry cumin and black pepper in oil.

Add sliced onion and fry till light brown.

Add chopped ginger and garlic in onion and fry for three minutes.

Add chopped tomatoes and stir fry it.

As the tomatoes become soft, add all the spices.

Stir fry it for five minutes.

Add soaked kidney beans with 4 cups water.

Cover and let it simmer for thirty minutes.

If after thirty minutes, beans are still hard then add some more water and simmer for another ten to fifteen minutes till they become tender.

When beans become soft and tender, evaporate all water till oil separates.

In the end add chopped green chillies and coriander leaves. Cook  for two minutes.

Serve it with boiled rice or chappati.

Recipe - Chicken Jalfrezi

Jalfrezi is a delicious gravy that mostly cooked with a variety of ingredients. You can add different vegetables and cheese to make a dish of your choice.

It can be cooked only with vegetables but you can also add meat in it. Chicken, fish and prawns are some of the most favorite meat that can be added in Jalfrezi.

I usually follow my own recipe to make jalfrezi. But, today, I cooked Chicken Jalfrezi for my family with a Mehran Recipe Mix. This is my first time to use a recipe packet for making Jalfrezi.

If you say, what would be my review of this Mehran Jalfrezi Spice Packet. My review will that this Mehran Recipe Mix is very simple to follow. The taste is simply great and me and my family loved it.


So, let's start our recipe.

Ingredients:

Chicken 750 gms
Tomatoes 5
Onion 2
Capsicum 2
Green Chillies 3-4
Yogurt 1/2 cup
Ginger 1 tbsp
Ginger Paste 1 tbsp
Garlic 1 tbsp
Lemon Juice
Vinegar 1-2 tbsp
Oil 3-4 cup
Mehran Jalfrezi Recipe Mix 1 packet

Method:

Blend 3 tomatoes with 1 onion and keep it aside.

Mix 4 tbsp Mehran Jalfrezi Recipe Mix in Chicken with yogurt. Marinate it for 20 minutes.

Mix rest of the spice mix in vegetable. Keep it aside.

Heat Oil, add blended tomatoes, onion mixture in it. Fry for few minutes.

Add ginger and garlic paste. fry it well.

Add Chicken and vinegar in it and fry for 3 minutes.

Now cover it and let it cook till chicken becomes tender and oil comes up.

Now add ginger julienne, vegetables and green chillies.

Cook for 2-3 minutes.

Squeeze lemon juice. Mix and remove.

Serve with boiled rice.

Recipe - Vegetable Filled Sandwich

Yesterday, I made vegetable sandwiches for my friend, who was visiting me after a long gap of three months. I was really excited to meet her. So, I also decided to try a new recipe of sandwiches to go with tea.

There are lots of varieties of vegetable sandwiches. I selected Potatoes as the main ingredient and added Peas and Carrots in it. The result was very good and my friend loved the taste and the look of the sandwiches. That’s why I am sharing this recipe with all of you. Hope you people will also like it.

Let’s start the recipe:

Ingredients

Potatoes 3
Carrots ½ cup
Peas ½ cup
Green Chillies 2 tbsp
Black pepper
Salt
Lemon juice 2 tbsp
Red chilli Crushed 1 tsp
Bread Slices 8
Butter

Green Chutney

Coriander Leaves 1 cup
Mint leaves 1 cup
Green Chillies 4
Garlic 2 cloves
Salt ½ tsp
Water 4-6 tbsp

Method

Blend all the green chutney ingredients in a fine paste. If needed add some more water in it and keep it aside.

Boil potatoes. Peel and mash potatoes well.

Boil peas with chopped carrot for few minutes.

In a bowl, mix mashed potatoes, peas and carrot.

Add finely chopped green chillies.

Add black pepper and salt as per your taste.

Add crushed red chilli and lemon juice in above mixture and mix it well.

Take bread slices and spread butter very lightly on both sides of the slice.

Spread blended green chutney on the slice.

Spread mashed potato mixture on the green chutney layer.

Potato mixture layer should not be very thick.

Cover it with another buttered slice.

Complete all the slices in the same manner.

Now, you can grill them in oven for 3-5 minutes or toast it in a grilling pan.

I made them in a sandwich maker because I love the shape and marks that a sandwich maker leaves on slices.


Serve them with ketchup.

Recipe: Traditional Shahi Haleem

Haleem is a traditional dish made up of lentils, pulses and meat.  A certain amount of various spices is important to enhance the flavour and aroma of haleem. This dish can be made with beef, mutton or chicken, but, if you are looking for the authentic taste than beef is best.

Haleem usually takes around 5-6 hours to cook and needs a lot expertise to make the right ratio of spices and lentils etc. To avoid any inaccurate ratio, the best way is to go for a brand’s spice and lentil packet, easily available in market and stores.


Today we will share haleem recipe made with Shan Shahi Haleem Mix. The ratio of spices and lentils is very balanced in this packet. All you need is to buy meat portion and your dish will be prepared easily. 

Let’s start our recipe

Ingredients

Meat boneless 400g
Bones 500g
Oil 1-2 cups
Onion 1
Shan Shahi Haleem Mix with two sachets of spices and pulses, grains.

Steps of Cooking

Heat half cup oil, add meat and Shan Shahi Haleem Mix. Stir fry for few minutes Add pulses and grain. Add 12 cups of water.

Cover and cook on low heat for about 4-6 hours until meat is tender.

Remove bones and discard. Blend mixture into a thick paste with wooden spoon or slightly grind it in a blender.

Again add water 2 cups and cook for 20 minutes.

Heat remaining oil and fry the sliced onion until golden. Pour into Haleem. Cover and cook on low heat for 20 minutes.

Garnish with fried onions, finely chopped ginger, green chillies, green coriander and lemon juice.

Recipe - Yummy Chicken Karahi

Karahi is a local term used for cooking utensil "wok". The traditional dish Karahi is a recipe that mostly cooked in a deep wok, hence the name has word 'Karahi' (wok) in the recipe.

Karahi can be made from beef, mutton, chicken, fish and prawns with the addition of yogurt, tomatoes and green chilies. It is an easy to make recipe with just few spices.

Let's check out our recipe of home made Chicken Karahi.

Ingredients

Chicken pieces 1 kg
Tomatoes 500 gms
Ginger Garlic Paste 2 tbsp
Red Chili powder 2 tsp
Turmeric powder 1/4 tsp
Salt as per taste
Fenugreek seeds 1/2 tsp
Yogurt 1/2 cup
Oil 1/2 cup
All Spice powder 1 tsp
Green Chilies 5
Coriander leaves for garnishing

Method

Heat oil in a wok.
Add ginger garlic paste and fry it till aroma comes out.
Add chicken pieces in it and cook till colour changes.
When chicken meat changes its colour, add chopped tomatoes and cook well.
Also add salt, turmeric and red chili powder in it.
After tomatoes are cooked well, add yogurt and fenugreek seeds.
Let it cook till oil separates.
When oil separates, add green chilies and all spice powder.
Cover the wok and cook for a minute.
Remove from flame.
Dish out Chicken Karahi and garnish it with coriander leaves and ginger thin stripes.
Serve it with Chapati or rice.

If you like very spicy food, adjust the spices as per your taste.

Recipe - Aromatic Butter Chicken

Last week we went to a restaurant for family dinner. The restaurant is famous for its Pakistani Cuisine. We ordered our food including different gravy based dishes and rice. One particular dish was extra ordinary tasty and it became an instant hit. It was the Butter Chicken that attracted us most.

Upon our family's demand, we tried Butter Chicken recipe at home and it turned out very delicious and aromatic dish. So, we are sharing our own recipe with you all.

Let's start our recipe:

Ingredients

Chicken boneless 750 gms
Lemon juice 2tbsp
Garlic paste 1tsp
Red chili powder 1tsp
Turmeric powder 1/2 tsp
Salt 1/2 tsp
Oil 1tsp

Onion chopped 1 medium
Ginger garlic paste 1tbsp
Tomato puree 1 cup
Yogurt 4tbsp
Red chili powder 2tsp
Turmeric powder 1/2 tsp
Garam masala powder 1tsp
Cumin powder 1/2tsp
Fenugreek dried leaves 1tsp
Salt (according to your taste)
Fresh cream 1cup
Butter 2tbsp
Coriander chopped 4tbsp

Method

Marinate boneless chicken pieces with lemon juice, garlic, red chili powder, turmeric powder, salt and oil. Keep it in fridge for 2 hours.

After 2 hours, fry above marinated chicken in 2tbsp oil. The color should not be dark nor white but light golden. Remove on to a plate.

In a pot, heat butter and add onions, fry till light golden color.

Add ginger garlic paste, cook 1 minute. Add tomato puree and cook till water dries.

Add all the remaining dry spices and keep stirring for 5 minutes.

Add yogurt in it, cook 4 minutes.

Now add above cooked chicken pieces. Cook 2 minutes.

Add fresh cream, coriander leaves and mix it in the gravy and chicken, cook for 2 minutes.

Delicious Aromatic Butter Chicken is ready to dish out. Garnish it with chopped coriander leaves and ginger.

Serve it with naan or rice.

Recipe - Smoked Mince (Dum ka Qeema)

In Pakistan, meat dishes have their own significance. It may be the wedding dinners or family lunches and dinners, in fact, no formal or casual meal is complete without meat based dish.  

Today, we are going to share our secret recipe of smoked mince, in Urdu we have a name Dum Ka Qeema for this unique yet simple dish. Many people do not like to eat red mince, no worries, you can use the red or white meat mince. You can even use fish mince for it. I have used red mince in this recipe.  

Different aromatic eastern spices will add a very delicious taste to the mince and it will become a mouth watering dish for your family and guests.

Let's start this Smoked Mince:

Ingredients


Red meat mince 500 gms
White onions 1 medium, fried and crushed
Ginger Garlic paste 1 tbsp
Green chili paste 1 tsp
Red chili powder to taste
Crushed cumin seeds 1 tsp
All spice 1 tsp
Gram flour (Baisan) 3 tbsp
Salt to taste
Black pepper powder 1/2 tsp
Lemon juice 1 tbsp
Yogurt 3/4 cup
Ginger thinly sliced 1 tbsp
Oil 1 cup
Piece of Charcoal

Method

In a large dish, add yogurt and all spices except oil and ginger slices.
Mix all the ingredients well.
Now add mince in it and mix all very well.
Cover it and place it in fridge for 30 minutes.
After the marination time is up, take out you mince and keep a side at room temperature.
In a pan, heat oil and add the marinated mince in it.
Stir fry mince for 3 minutes.
Add 1/2 cup water and cover it.
Cook it for 12 to 15 minutes.
Again stir fry for few minutes so that oil separates.
Make sure you stir continuously during cooking, otherwise mince will stick to the pan.
Lastly heat a charcoal piece and place it in the middle of your pan over a piece of roti/bread. 
Pour some oil drops on coal and immediately cover the pan.
Leave it for 5 minutes, the charcoal smell will enhance the flavour of mince and spices.
Take out the cooked mince in a dish and garnish it with chopped coriander leaves, ginger slices and green chilies. 
Serve it with parathas, chapati and naan.

Recipe: Yummy Seekh Kababs

Seekh Kabab are meat based kababs with lots of spices. Mostly these kababs are cooked as a BBQ dish at special events or picnics. The procedure for bbq is a little bit lengthy and tiresome and this is the reason many people avoid bbq.

Today, we are sharing an easy recipe to enjoy Seekh kabab without any difficulty. The recipe is very easy to follow and would not require any particular ingredients that you have search on store shelves. All you need is meat mince of your choice and regular spices.

Let’s start the quick recipe of Seekh Kababs:

Ingredients

Mince 750gms, (mutton, beef or chicken)
White onion 1 tbsp, finely chopped
Bread slices 2, soaked in water or milk
Ginger and garlic paste 1 tbsp each
Lemon juice 2 tbsp
Green chilies paste 1 tbsp
Red chili powder to taste
Salt to taste
Black pepper powder 1 tsp
All spice powder 1 tsp
Egg 1, lightly beaten
Oil for frying
Charcoal piece

Method

Marinate mince with all the above mentioned ingredients except oil and charcoal.
Marinate the mixture for 40-50 minutes. Keep it in fridge.
After marination time is completed, shape the kababs as shown in photo. You can thread them on a skewer (seekh) and after smoothing like a kabab, carefully remove them from the skewer onto the plate. Their shape should be like a Seekh kabab.
In a frying pan, heat oil 4-6 tbsp and gently place the kababs for frying.
Cook kababs 5 minutes on each side or till tender.
Take extra care while you turn them in pan during frying.
Seekh kababs are ready to serve.

To have a good BBQ aroma, just add a lit coal piece in the center of the kababs and add few drops of oil on it. Immediately cover the kababs with a lid or anything so that Seekh kababs can have a nice coal smell.


Serve Seekh kababs with a chutney of your choice.
